Yellow Chicken Curry with Kilombero rice

Full of flavour - Remove chicken for a vegan alternative

You will need:
  • 1 onion 
  • vegetable oil
  • 60g Yellow Curry Paste
  • 400g chopped and peeled tomatoes
  • 200g sliced sweet potato
  • 400g chicken breast or thigh
  • bed of Kilombero Rice to serve

Method:
  1.  Fry onion petals lightly in vegetable oil until soft, then add the yellow curry paste and fry lightly.
  2.  Add the tin of chopped tomatoes, and the sweet potato and simmer for 10 minutes.
  3.  Flash fry the chicken then add to the sauce and simmer for 10 minutes.
  4.  Remove from the heat and let stand for 5 minutes before serving with Kilombero rice (cooked as per packet instructions).
