Tuscan Chicken

Use the same amount of cauliflower for a vegetarian option

Ingredients:
  • 1 Onion 
  • 3 Cloves of Garlic 
  • One tin of sundried tomatoes 
  • 400g chicken breast (400g cauliflower for veggie option) 
  • 100g baby spinach 
  • 150ml Chicken stock 
  • 150ml Double cream 
  • 2 tsp True origin sundried tomato mustard 
  • 1 tsp oregano 
  • 60g Parmesan
Method:
  1. Fry chopped onion for a few minutes in a little oil, add in chopped sundried tomatoes and crushed garlic, add chicken (or cauliflower) and fry until cooked through. 
  2. Stir in spinach and let wilt and then add the stock and cream, stir in mustard and oregano. 
  3. Let simmer for 10 minutes then add in parmesan and season to taste.
  4. Serve with your favourite pasta and enjoy.
