Sweet Potato & Coconut Curry Soup

A delicious warming vegan soup

Ingredients:
  • 1 onion – chopped
  • oil
  • 2 garlic cloves – peeled and crushed
  • 1 jar Medium Curry Sauce
  • 1.5kg sweet potatoes –peeled and chopped
  • 400ml coconut milk
  • Stock (vegetable or chicken)

Method:
  1.  Fry onion in oil with garlic for 10 minutes
  2.  Add sweet potatoes, medium curry sauce, coconut milk and stir
  3. Boil and simmer for 20 minutes
  4.  Liquidise, and if too thick, add water as required and salt and pepper
