Harissa Sweet Potato Fries

Fantastic option if you fancy a change from normal chips

Fancy chips to go with your dinner but want something a bit different ?  

Try sweet potato fries roasted in the oven and given an easy kick of warm spice with a True Origin Harissa Spice Grinder.  Sweet potatoes cook to a softer texture than a potato but are very tasty and the polenta gives a pleasing bit of crunch.  

Brightly coloured veggies are thought to be good for you and these chips are a riot of orange with their speckles of True Origin Harissa that you have freshly ground yourself.

4 portions approximately 

Ingredients:
  • 3 small sweet potatoes 
  • 2 tablespoons of olive oil
  • 2 to 3 tablespoons of fine polenta
  • Good pinch of salt
  • True Origin Harissa Spice 

Method:
  1. Peel the sweet potatoes. If they have smooth clean skin feel free to leave it on, then cut into chips. Sweet potatoes that are not too long are ideal. (The best way to cut a sweet potato is to first cut it in half lengthways. Then putting the flat side on the chopping board, it’s easier to cut lengthways again. You can cut the wider slices into two long narrow slices). 
  2. In a large bowl, add the salt, olive oil and a couple of tablespoons of fine polenta. Then grind in about 5 or 6 turns of the True Origin Harissa. Give this a quick stir then add the sweet potato chips. (It’s easier to then turn the chips over in the bowl with your hands until they are well coated.  At this point you can decide if you need more Harissa. You should be able to see ground Harissa on every chip so grind in a bit more if needed. Mix again). 
  3. If you have a non-stick oven tray just tip the chips out of the bowl on to it. Spread a little olive oil first if you have a plain metal tray. The tray should give enough room to spread the chips out so they are not touching. 
  4. Cook for about 30 minutes in a preheated oven at 200 degrees (180 degree fan). It’s worth turning them over carefully half way.
  5. The chips will soften quite quickly so you should then check them in the last 10 minutes until they reach your desired level of browning. 
  6. If you have an air fryer then sweet potato fries should work very well. They might have to be cooked in batches to give them enough space. See your instruction book for times and settings.
