Prepare ginger beer bread as per packet instructions and cut 4 thick slices.
Crack eggs into a large flat bottom bowl and whisk until fluffy.
Add in the rest of the ingredients and then add the bread one slice at a time saturating the bread with the liquid mixture until all the mixture is absorbed.
Coat a pan with oil and heat on a medium – low heat and cook each side of the French toast for 3 minutes on either side or until golden brown.
Garnish with citrus fruit of your choice and maple syrup.
