Curried Coconut Soup

A lovely creamy soup with a kick

Ingredients:

Directions:
  1. Chop the onion up into small pieces and fry off in a little olive oil for 2 mins
  2. Add the curry paste and let it simmer for 3 mins
  3. Add lentils and mix in, leaving for a few minutes
  4. Add the coconut milk, mango chutney, stock cube and water. Mix and simmer for 30 mins
  5. Blend with a hand blender in the pan and add some coriander if you want to.
  6. Serve and enjoy!
