Tasty Chicken with Roasted Vegetables

Ingredients:
  • Chicken Breasts any quantity 1-8 (or more!)
  • Bought Fine Breadcrumbs (whole packet)
  • Whole Tub of True Origin Chicken or Grill Seasoning Rub
  • Mixed egg to coat chicken
  • Selection of veg sliced – onion, pepper, courgette, mushrooms

Method:
  1. Heat oven to 180 degrees (GM4)
  2. Lightly fry the veg and place in the bottom of an oven proof dish
  3. Mix the breadcrumbs with the full tub of seasoning mix and keep in a tub with a tight lid, this will last for months and is ready to use whenever you want to have a tasty breadcrumb covering.
  4. Coat the chicken in egg and then some of the breadcrumb mixture spread on a plate
  5. Brown the coated chicken and then place on top of the veg
  6. Cook uncovered for 30 minutes

Great for feeding a large number quickly and the coating could also be used on fish.
